Pumpkin Cake Mix Cupcakes

Mix together the cake mix sugar oil water eggs pumpkin puree pumpkin spice and cinnamon.

Cool in pans on wire racks for 10 minutes. To make these pumpkin spice cupcakes combine the cake mix plus ingredients on back minus the water pumpkin pie spice and pumpkin puree. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Remove to wire racks to cool completely.

Pour batter into prepared muffin cups filling 3 4 full. Stir spice cake mix and pumpkin together until a thick batter emerges and the spice cake mix is completely mixed into the pumpkin. In large bowl beat cake mix pumpkin water oil eggs and pumpkin pie spice with electric mixer on low speed 30 seconds then on medium speed 2 minutes scraping bowl occasionally. Stir for 2 minutes until the batter is super smooth.

Pour the pumpkin cupcake batter into liners in muffin tins and bake for 17 20 minutes. Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions. Allow to cool and top with cinnamon buttercream icing recipe below. Spoon batter into muffin tins and bake for approximately 15 minutes or until a toothpick inserted into cupcake comes out clean.

Blend cake mix pumpkin puree eggs water and oil in a large bowl at low speed until moistened. Increase speed to medium and beat for an additional 2 minutes. Add vanilla and cinnamon and mix well. Blend cake mix pumpkin eggs oil and water in large mixer bowl until moistened.

Preheat your oven to 350 degrees f. Prepare the cake mix as directed but with the following change. Divide batter evenly among muffin cups about two thirds full. Divide the batter among the prepared muffin tins lined with paper liners and bake at 350 degrees until a toothpick inserted into the center of a cupcake comes out.

Pour batter into muffin cups evenly about 3 4 full.
